Superfood Granola
Ingredients
2 cup organic rolled oats
1 cup raw nuts of choice, chopped (walnuts, almonds, hazelnuts, pecans)
1 cup pumpkin seeds
½ cup goji berries and/or dried fruit (saltanas, dried cranberries, apricot)
1 cup coconut flakes
2 tsp cinnamon
1/2 tsp sea salt
1 tbsp melted coconut oil
¼ cup maple syrup or honey
2 tbsp nut butter
Method
Preheat your oven to 250*F. Line a baking sheet with baking paper.
In a large bowl, combine organic rolled oats, nuts of choice, pumpkin seeds, coconut, cinnamon and sea salt.
Combine melted coconut oil, maple syrup /or honey and nut butter, drizzle over mixture.
Spread the granola mixture over the baking paper and bake for 30-35 minutes or until golden brown.
Remove from the oven and toss through the goji berries/ dried fruit.
Allow to cool for 15 minutes before serving.
Store in a sealed container for up to 2 weeks.
