Superfood Granola

Ingredients

  • 2 cup organic rolled oats

  • 1 cup raw nuts of choice, chopped (walnuts, almonds, hazelnuts, pecans)

  • 1 cup pumpkin seeds 

  • ½ cup goji berries and/or dried fruit (saltanas, dried cranberries, apricot)

  • 1 cup coconut flakes

  • 2 tsp cinnamon 

  • 1/2 tsp sea salt 

  • 1 tbsp melted coconut oil 

  • ¼ cup maple syrup or honey 

  • 2  tbsp nut butter

Method

  1. Preheat your oven to 250*F. Line a baking sheet with baking paper. 

  2. In a large bowl, combine organic rolled oats, nuts of choice, pumpkin seeds, coconut, cinnamon  and sea salt. 

  3. Combine melted coconut oil, maple syrup /or honey and nut butter, drizzle over mixture.

  4. Spread the granola mixture over the baking paper and bake for 30-35 minutes or until golden brown. 

  5. Remove from the oven and toss through the goji berries/ dried fruit. 

  6. Allow to cool for 15 minutes before serving. 

  7. Store in a sealed container for up to 2 weeks.
